Gin Tonic beef tartare: videorecipe!

A 360-degree sensory experience, along the scents and flavors of the most popular cocktail in the world, the Gin Tonic. From the drink to the cooking, up to the pairings.



It isn’t often that you come across a dish capable of telling such a bold and original story as the Gin Tonic Tartare. This is more than just a recipe — it’s a true statement of intent: to bring the character of our gin onto the plate, not only into the glass.


The journey begins with a fundamental choice: the meat. The best cuts for a hand-chopped tartare are lean, tender, and rich in natural flavor. Tenderloin, rump, or top round are ideal, as they offer a soft, compact texture without excessive fat, and cutting them by hand preserves their natural structure and fibers.


Once the meat is finely chopped, it’s time for the seasoning — the element that sets this tartare apart from any other. A drizzle of extra virgin olive oil, a sprinkle of our BUGIN Cocktail Rub — specially designed to harmonize with the aromatic notes of gin — and a dash of our Ready To Drink Gin Tonic. At this point, it’s crucial to let the tartare rest in the fridge for at least an hour. During this time, the flavors fully develop and the meat absorbs the citrusy, resinous character of the gin, achieving the perfect balance between delicacy and intensity.


Meanwhile, you can prepare another essential component of the dish: the egg yolk. Enrich it with a bit of our gin-inspired rub and whip it gently, so it can crown the tartare with a soft, enveloping note that complements the savory and fresh elements of the dish.

Using a ring mold, shape the tartare into a clean, elegant form, ready to be finished with the final touches: another light dusting of Gin Tonic rub, the whipped yolk on top, and finally, a small but striking detail — the Gin Tonic jelly. This last touch completes the circle, bringing the aromatic profile of our BUGIN gin back onto the plate in a surprising solid form.


For those who like an extra savory kick, a few flakes of salt can be added at the end, bearing in mind that the rub already contains a perfectly balanced salty note.
